This wine reflects my background in cool climate winemaking applied to old vines of higher-elevation McLaren Vale. A Syrah of perfume, poise and intricacy of structure. Sourced from two distinctly different yet highly complementary blocks sitting at opposing corners of the property: Block 126 - cooler, darker, more mineral, savoury and structured, and block 308, all perfumed, open, expressive and graceful. In combination with the winemaking, this vineyard produces wines that are beautiful to drink in the near term, and promise an exciting future – as history has proven. 
WINEMAKING NOTES

Block 126 was fermented with 40% whole bunches combined with 60% de-stemmed fruit. The ferment was locked up for seven days to infuse before gentle plunging and some mild splashing towards peak ferment to fully develop aroma, flavour and colour. After two weeks, the ferment was pressed to neutral 500 L puncheon barrels for two years’ maturation on lees.

Block 308 was entirely de-stemmed with the focus on purity and elevating the perfumed attributes of the block, and its finely pixelated tannins. Ferment was left to infuse for seven days before gentle plunging and some brief splashing to fully express the wines’ potential. Fermentation temperature was cooler, peaking at 26°C to retain delicate aromatic detail and manage tannin extraction. Post-maceration occurred over a period of eight weeks to achieve full resolution of the tannins, before pressing to barrel for two years' maturation on lees.

The portions were racked and blended to tank for a further two weeks before bottling unfined and unfiltered. The final blend was 15% WB and 85% DS.

The Hickinbotham Vineyard

The slopes of the Hickinbotham Vineyard are steeped in Australian history. It's old Shiraz vines planted in 1962 and dry-farmed since, have graced the blends of some of Australia's most iconic, sought-after wines.

Soils are brown clay loam with weathered and broken silt from the Belair Subgroup (750 million years old) sitting at 230m above sea-level. All of these factors, coupled with the complex and diverse aspects, give the wines great singularity; a distinctly mineral feel with thrilling fruit intensity, detailed perfume, and finely woven tannins.
